Recently, my friends at Ken Rathbun’s restaurant, Jasper's, in Plano heard that my wife is a vegetarian and invited us to try some new vegetarian items they plan to add to their menu. 

Rachel has never really had a problem finding something to eat at restaurants. Even when there aren't any vegetarian only items, there are usually vegetarian sides, salads and desserts for her to indulge in. However, it's great when we can go somewhere and she can get a full meal as well.

Our favorite vegetarian dish at Jaspers's is a  grilled poblano pepper stuffed with jasmine rice cooked with roasted pearl red and white onions, a trinity of bell peppers, roasted corn, cilantro, spinach, gouda cheese and a touch of cream. The plate is garnished with an ancho BBQ sauce and crispy fried onions. It was so incredible I almost forgot about my meat-eating ways. 

We will definitely be back to sample even more of vegetarian dishes and if you don't have dinner plans for Valentine's Day, then I highly suggest making a reservation at Jasper's at the Shops of Legacy in Plano. If you have any vegetarians in your party, make sure you tell them when you book. We also highly recommend the server Regina (pronounced Ra-VEEN-ah) and their amazing cocktails!
