The countdown to Thanksgiving is now only thirteen days away!! The recipe of the day is my "Famous" Macaroni and lots of cheese!! I make this dish for all the major holidays and seems that I can never make enough! This recipe is very easy and if you want to make it a meal just add chicken and broccoli or if you want to really impress your guests, add fresh lobster chunks for a creamy, deluxe lobster mac!
Stacy's "Famous" Macaroni and lots of Cheeeeeeeeeese!!
- 1 can (49.5 oz) Chicken Broth
- 1.5 lb of Velveeta Cheese (2lb bar)
- Large elbow macaroni or ziti (24oz)
- Heavy Whipping Cream 1/2 cup
- 1.5 Stick of Butter
- One 8 oz package of Kraft Triple Cheddar Cheese ( Vermont White Cheddar, Sharp & Mild Cheddar)
- Salt/Pepper to taste
- Garlic powder dash to taste
Spray non stick oil into a 9" x 15" (5 quart) Metal Baking Pan
1. Empty entire can of chicken broth into pot to boil.
2. Boil pasta in Chicken Broth
3. Drain into Mixing bowl and save left over chicken broth and set aside
4. Pour pasta into a dish to set aside and add one stick of butter to pasta to let butter soak into pasta. Stir occasionally to set.
5. Add salt/pepper to taste on pasta.
6. Add Chicken broth into pan and add the Velveeta in small squares to melt evenly.
7. Add 3 tablespoons of heavy whipping cream.
8. Add Pepper, Garlic to melted cheese mixture to your taste.
*Combine mixture of melted cheese into the pasta dish and let set to soak up cheese. 10 minutes
To assemble the dish:
Layer pasta and shredded cheeses like you would layer a lasagna and put pieces of butter on middle layer. Top with a few dashes of heavy whipping cream and shredded cheese on top.
Bake at 350 degrees covered with foil for 20 minutes. Remove foil after 15 minutes then remove when cheese has melted =)
